Lao Yum Salad is one of my favorite salads to make. The creamy egg yolk dressing combines salty, sweet and sour. Traditionally this salad uses pork but you can omit it if you want.
First you need to make some hard boiled eggs. After they are cooked, peel and separate the egg yolks from the egg whites. Chop the egg whites into bite size pieces.
In a food processor, add the egg yolk, sugar, vinegar, lime juice and fish sauce. Pulse until the egg yolk mixture is smooth and without lumps. Then slowly drizzle the vegetable oil into the mixture as the processor is on. The reason we use vegetable oil is because it has no taste and we don’t want it to add more flavor to the dressing. Add a dash of salt and pepper.
For the salad, you can use romain or iceberg lettuce, sliced cucumbers, chopped tomatoes, egg white slices, cilantro, and chopped green onions.
Some people also like to add some pork to the salad. You can cook some ground pork with a little salt and pepper on the fry pan or add some boiled pork.
This salad is really all about the dressing. You can add any vegetables and protein you want. It’s so satisfying and I guarantee you it will become your favorite salad too!
- 4 eggs boiled and separated
- 4 T sugar
- 4 T lime juice
- 2 T fish sauce
- 1/3 C vegetable oil
- 1 T water
- 1 bunch butter lettuce
- 1 bunch watercress
- 1/2 bunch cilantro
- 1/2 bunch green onions chopped 2 inch length
- 1 small cucumber sliced thinly
- 1 tomato sliced thinly
- 1/2 red bell pepper sliced
- 1 lb pork butt
- 1 pinch salt
- 2 cloves garlic finely chopped
- 2 T vegetable oil
Separate the boiled egg yolk from the boiled egg whites. Slice the egg whites and put aside for the salad
Put the egg yolks, fish sauce, sugar, lime juice, water and vegetable oil in a food processor. Pulse until the mixture is smooth.
Add the oil to a fry pan. Sauté the garlic
Add the pork and a pinch of salt
Stir fry until the pork is cooked.
Add the dressing to the lettuce, watercress, tomatoes, cucumber, cilantro, green onion, hard egg whites and toss. The pork is optional

This is the same one I use to shred papaya. Use it to peel the skin on the cucumber. Do it sparingly, so you still have some green skin left. When you slice the cucumber, you will get the nice grooves.

I personally love lao yum salad, but my husband does not like to eat his vegetables in general. However, I made this a couple nights ago, and he could not stop eating it! Tasty and healthy!
